There is an "adding custom textures" tutorial in the CoD section. Read it... it will answer your question. (Just skip the texture creating bit).

Go to your uo/textures folder...
Create a new folder that you can easly recognise in the editor and put your textures there...
(ex. uo/textures/my textures/ - )

Make sure you put the textures in a 'textures' folder in your pk3 file, otherwise the texture wont show up in you map....

ok extract those textures to your desktop
create a new zip file, call it zzz_textures.zip or something
make a folder in that called "textures"
in that make a new folder called "custom", or anything you like
put your textures in that new folder
change the extension of zzz_textures from .zip to .pk3
finally, put the pk3 file in your call of duty/uo, or call of duty/main folder. (also copy the pk3 and put it in the flare workaround folder)

The new textures should appear in Graydiant then

Read the compiling for UO tutorials. It's used to make the flare part of the compile (which adds the lighting) run correctly.
