What if everything on the map is detail (except a couple things?) not structural whats wrong with that?

Vis won't work properly, I suppose.

It'll either take ages (like it doesn't anyway :/ ) or finish straight away and have no positive effect on the speed of the map.

The map I'm working on now for cod4 (in cod2radiant), all of the brushwork is detail, except for the sky box. When I'm ready to portal, then I'll decide which brushes I will need to make structural so that I can to block off visible areas.

I would assume that if everything in a map is detail, you'll end up with one big open box where everything is visible. My opinion is there should be a decent blend of both detail and structural.
