I was wondering if it would be possible to somehow have a "security camera" in the map, and somehow have it relay footage to a television set in another room in the building. I know little about scripting so I have no idea if this would be impossible or freakishly hard to do.

I highly doubt it, they took this sort of stuff out when they first made CoD from the Q3 engine.

What you could do is take a screenie of where the camera points then use the image to create a texture which you can decal onto a model screen. You wont seee players but atleast it will look like the camera is recording footage.
