The trick is to set g_synchronousClients back to "0" just a split second after starting the recording (to prevent lag).

The most simple procedure would look like this:
g_synchronousClients "1"
record demoname
g_synchronousClients "0"
..
.
[play the game]
.
..
stoprecord

The game will now have recorded a demo with the name "demoname", in the folder /baseef/demos
