Doh.  It's for Outlook, not Outlook Express...  I do have Outlook, I just don't use it.  Ah well.  One of these days.

Mail Washer Pro lets you see whats on your mail server and delete what you want, without downloading it to you computer and it has a learning filter, and you can design you own filters and other cool stuff.

I had to do this a couple of years ago when I did tech support for an ISP that was a little slow in adopting their own spam filters :)

Basically, I'm not aware of any direct plug-ins for Outlook Express for spam filtering.  So, really you're limited to running a pop3 proxy on your PC (which logically sits between OE and your mail server).  This includes things like the aforementioned Mail Washer Pro.

However, you're probably looking for something that can do some semblance of automatic filtering, eg, something you can "train" to detect spam/not spam (the last version of Mail Washer I used didn't do that, it just showed you what you can delete if you want - Carver's post above seems to indicate it now does do something like that, but I can't vouch for it's capabilities).

(Normally these types of proxies are configured to tag what they think is spam with *****SPAM***** in the subject line, so that they still get through to OE, but you can set up OE to filter based on that subject line, and direct them to a specific folder or delete them outright or whatever you want to do with them.)

I had great success with a product called SAProxy (short for SpamAssassin Proxy, eg, it made use of bits from the industrial-strength SpamAssassin filter) - however it appears the company responsible for it has been bought out and the product discontinued. A bit of googling reveals that one of the authors of SAProxy has created a (free) clone of it called SpamFu - it looks like pretty much the same thing as SAProxy, but I haven't used it personally.

There is a similar (free) proxy project that's been around for quite a while called POPFile that does basically the same thing re: training what is spam and what isn't, except it doesn't incorporate all of SpamAssassin's techniques, which may or not be relevant for you (it appears they have a specific guide for configuring OE).
