I believe a direct translation of 'sheep demon' would be 'hitsuji no yasha...'  I'll double check and post the characters... (I have to make a .jpg since this stupid board doesn't support Asian chars.)

That's the best I can see...  The first character is 'hitsuji,' or 'sheep.'  The second is 'aku' or 'evil,' and the last is 'rei' or 'spirit.'  So the best I can tell, it would be 'Evil Sheep Spirit.'  In normal speech, I think you'd say 'Hitsuji NO akurei,' the 'no' making 'hitsuji' (a noun) describe the 'akurei.'  But they don't normally put hiragana in tattoos, so the 'no' should be implied.

Sheep, I recommend you get a second opinion on whatever agent provides.  How do you know he's not giving you the translation for "Rob me!" or "Please kick me in the junk!" ??

No, sheep refers to the entire species, ram is male, and ewe is a female.
