To start out, I accept the duel and then immediately bring up my chat bubble.  (Normally, the respectful jedi player will not attack you due to the fact that they are bound to the jedi oath, one of their greatest weaknesses)
Ideally. you would want to be as close to your opponent as possible... Continue to sit there with the chat bubble up until your opponent lowers their lightsaber or brings up their own chatbubble...  ( a good way to achieve this is to ask them a question about something technical... for instance, wtf how do I take a screenshot?)

AS SOON AS THEY DROP THEIR DEFENSE :  You strike with the deadliest and quickest attack possible!! (for me, this is the "+moveforward; +attack" combo)  
I like to say, "I AM VICTORIOUS!"  then disconnect... change my name, and reconnect..  
The greatest thing I have done is to duel the same person with same strategy directly after you reconnect under a different name, and win again!!!

It is hilarious, and it is one of the few joys in my JK3 multiplayer experience.

When I see somebody do something like that I'll challenge them to a duel. Then I turn my saber off and wait for them to come at me then right before the lamer attacks I hit'em with a lunge and then a backstab :b

My little defense against this in duels is start to jump and hold it because you cant move away you basically hover and the second the duel starts you fly away. Kinda sad how we no longer bow anymore though with the freaking emotes not working in FFA    I cant even do some of the cooler bows or such.
