Yup, once installed there is no way to uninstall the patch without uninstalling the entire game and starting over.

I know for quake they had a converter that let you switch point release's.

SOMEONE SHOULD DO THAT FOR SOF2!!!!!

No, but you can convert them to AVI... I've done a few. It's quite easy actually, once you are familiar with the tools.

I use SoundForge to record the audio from the demo into a .wav file. Then I play the demo again after typing cl_avidemo 15 in the console to have it make .JPGs of it. If the pictures need to be brightened or anything, I create a droplet in PhotoShop to automate the task. After that I use VideoMach (and the divx codec) to convert the .JPGs and .wav into an .AVI

Tweaking the video to synch up with the audio is the most difficult part, and that's really just annoying rather than hard.
