It's not too tough if you're good with curves.

1. Make a straight road section: centerline, sides, transition to dirt, transition to grass.  Make all the pieces simple patch meshes, 3x3.  Save and make a copy of this brush.  Work with the copy.
2. Decide where it will curve to and mark that spot with a couple brushes you'll delete later.  We'll work with a 45 degree curve.  This is enough to make it look like it winds, but not too hard to work with.
3. Select your innermost piece and select vertex manipulation.  Bend (not the bend function - just using vertex manipulation) one end of the brush to it's final destination.
4. Perform step 3 on the other brushes.
5. Copy, rotate, and paste for more sections.
6a. (Lower quality, easier way with better FPS) Make a brush 1 texel under your road with grass or whatever your surrounding texture is, so your road floats 1 texel above it.
OR
6b. (Better quality, but more time consuming and more triangles) Use patch meshes to fill in the area around your road.
